Controlled Atmosphere Packaging is the method where the inside of the package is filled with a carefully chosen gas mixture that is actively controlled and maintained during storage. The goal is to slow spoilage and preserve quality by limiting oxygen and adjusting other gases, often using blends like nitrogen and carbon dioxide. This differs from vacuum packaging, which simply removes air to create a very low-oxygen environment without keeping a defined gas balance; and from reduced oxygen packaging, which lowers oxygen levels but doesn’t necessarily enforce a specific, monitored gas composition. In short, CA focuses on setting and preserving a specific, monitored gas mix inside the package to extend shelf life.
